Does it matter if I use a 0.75 mm or 1.5 mm or 2.5 mm speaker cable?

One can argue about loudspeaker cables and their cross-sectional area, even about banana plugs! In my opinion, Digitec gives reasonable information in the product description. If you don't listen to TV/music at full load all the time, you will hardly have any (audible) losses with a 1.5 or 2.5 cable. An acquaintance of mine has one of two medium-sized Denon speakers connected to a "telephone wire" because of the space available in the small cable duct. The difference to the other, properly (approx. 1.5 mm2 cross-section) connected LS is not audible at normal volume and the receiver has been working like this for years without any damage! I stick to the motto: LS cable as short as possible, the stripped ends are tinned on the last 3 mm and 1.5 mm2 is enough!

Since the price differences are not too big, I would choose at least 2.5mm² for hi-fi, 4mm² for long cables and pure copper (OFC) for the material. The probability that you will hear a difference in sound is rather small. But this way you know that you have bought the optimum and are not constantly questioning whether it would not be even better with thicker wires.
For less important installations, children's rooms, kitchens or balconies, 0.75mm² is enough, with 1.5mm² you are on the safe side.
With 4mm² OFC, you get the most out of it, even the super-expensive Schwurblerk cables don't bring any sound advantages.
