Is the adapter also compatible with the new MacBook Pro (16 inch, 2019)? The new MacBook uses a Thunderbolt 3 connection, which is somewhat newer than the connection of this adapter.

Thunderbolt 3 runs via the USB-C port. USB-C on the MacBook Pro is effectively a multifunction port.
