What do the 2 console [Ethernet and USB] ports do? I mean can I use them for something useful?

Unfortunately not:
The RJ45 console port is a serial port to access the CLI (you also need a special RJ45-2-DB9 cable). In other words, to somehow access the shell in the event of a problem. As far as I know, it cannot be converted to a normal network port.
The USB port has the same purpose. This also only gives you access to the Unifi CLI
