Can I mount the processor on my Asus Z170 deluxe board without hesitation? Or is it a matter of luck whether it really harmonises 100% without the z270? BIOS and co...

Check the Asus website. Each board has a support tab with a compatibility list. For most boards, Asus has provided a bios update that ensures compatibility for Kaby Lake CPUs under chipset Z170.
I bought the 7700k, but it doesn't work because you can't upgrade the bios to version 3007 (Asus z170 Deluxe), is that right? I can't use it like that.
