I have 2x8gb, but wanted to buy 2x16gb would that work? Or I may only 2x 8gb?

The optimum would be to use the same RAM sticks. I would not recommend different ones.

This is possible, but make sure that each channel has the same amount of capacity. If I have understood dual chanel correctly, this should work without any problems.
