Recommended RAM according to the manufacturer is 2666MHz. Is everything above that downclocked? If so, is it worth using 3000 or 3200? Is it possible to increase this? Perhaps someone could explain this to me in a little more detail.

2666 MHz is the standard memory frequency for this processor. Using an XMP profile or manual overclocking, the memory can also be operated at a higher frequency. This is usually listed in more detail on the mainboard itself, what exactly is supported and what is not. There is usually also a QVL list in the support area, which tells which RAM modules have been tested at which speed and therefore also work.
