The 16Pro has SIM and eSIM, can you use both at the same time, i.e. via eSIM e.g. phone and via SIM data traffic?

Yes, it works perfectly. I often do this abroad. You can then set what runs via which card or e-Sim
I also do this with the iPhone 14. If you google you will find many very cheap suppliers for single weeks that offer an e-SIM all over the world
