Looking at the 8TB. Does that mean that each disk has 8TB or that the sum of the two disks is 8TB and the space available is therefore 4TB total?

8TB is the maximum available storage capacity (for the corresponding version). This means that each hard drive has 4TB. Then it depends on whether you want data redundancy and how you configure the RAID (0 or 1) to know whether you have 4TB or 8TB available at the end.
