The grinding mechanism is made of hardened ceramic, which does not corrode and ensures consistently good performance over the long term. Unscrew the metal knob and remove the top to fill the mill with dry peppercorns. For finely ground pepper, turn the metal knob clockwise, and counterclockwise for coarsely ground pepper.
